Like many people these days, I really want to incorporate more whole foods into my family’s diet and to move away from processed foods.
I decided that instead of buying granola bars, bread, cookies, waffles, etc., I’m going to make my own!! No more weird ingredients that I can’t even pronounce. No more high fructose corn syrup and processed grains! I was so excited and ready to jump right in. I built a pinboard, researched recipes, went to the grocery store for yeast, flax, flour, oats, and all the other healthy supplies I needed. I was ready!
The problem? I have two young children, and not a lot of extra time on my hands to make all the wonderful things I found.
So, I focused on really simple recipes that required very little time and tried a few. I have found five recipes that I LOVE and make in my kitchen pretty much every week. I think that any busy mom can find the time to make these!
Homemade Granola Bars: My family loves these so much that they are a staple in our house. I make them every week and keep them stocked in my pantry at all times. They are simple and quick to make too, and that’s always a plus.
Whole Wheat Waffles: I make a double batch of these waffles and keep them in the freezer. They are perfect to pop into the microwave or toaster for a quick, delicious, and healthy breakfast.
2 Ingredient Cookies: Healthy Cookies? Yes please! The best thing about these little cookies is that they are super healthy and you can add in whatever you like to mix things up a bit. So quick, and so simple!
Egg Muffins: I love these so much. I add whatever I have on hand, usually cooked veggies and sausage, to the egg mixture. I make a batch of these every week and I keep the rest in the fridge. I heat them up in microwave and we get to eat a healthy breakfast with almost no effort.
Old Time Vanilla Ice Cream: Ok, so this may not be “healthy” but it is free from all those weird ingredients in store bought kind. My hubby gave me an ice cream maker for my birthday and this is my go-to recipe. Now, I have good ice cream in my freezer whenever I want it!
